Grapes: 85% Merlot, Cabernet Sauvignon 15%, vinified separately
Color: Deep and intense ruby red.
Bouquet: Great intensity and elegance with notes of mature blackberry, red currant and cherry, followed by balsamic spicy features including tobacco and chocolate.
Tasting and Finish on the Palate: Broad and full-flavored, persistent and austere with notes of licorice, spices and red fruit pulp, and a developing structure that will age well.
Vinification and Ageing: The selected grapes are immediately cooled to 12-14°; the juice macerates in wooden barrels of 8.000 at capacity for 12-15 days. After the malolactic fermentation the wine matures in 225 liter barrique for 12 months. Before release to the market, the wines rest in the bottle for an additional six months.
Pairing Suggestion: Best when chilled to 18-20°C and paired with first courses featuring; truffles, braised meats, stuffed with chestnuts, game, or mature cheeses. Alcohol 14% By Vol
